If you’ve been around a little while like me, you’ll remember P•o•P•s•y hitting the local scene back in 2014. Their P•o•P•s•y Popsicle cart could be found all over downtown and at local events.

The locally owned small business has not just survived but also flourished for more than ten years, transitioning ownership and growing along the way. They now occupy a brick & mortar location with expanded indoor seating and a full menu of good for you, yummy menu selections!

Menu showcase:
🔹Energy Bites – These can be found in the grab and go cooler and make a perfect snack or on the go light meal. It’s oatmeal, peanut butter, honey, and cacao dark chocolate nibs.

Cacao nibs are similar to chocolate but less processed and contain fewer unhealthy additives. Cacao nibs are full of nutrients, including antioxidants, fiber, magnesium, potassium, and iron, and also contain theobromine, which can enhance mood. They have a deep, intense chocolate flavor that is bitter, nutty, toasty, and crunchy,

Each container holds two Energy Bits. Just grab what you want, pay at the counter and go. You’re all set!

🔹 Southwest Turkey wrap – Starting with a spinach tortilla wrap, they fill this with honey Turkey, shredded cheddar, fresh avocado, house-made corn salsa, and chipotle ranch for a little spicy kick of flavor!
You can order this with chips, or try their “Pick 2” and combine a half wrap with a half bowl or loaded toast.

You may also choose the more traditional Turkey Club with honey turkey, cheese, lettuce, tomato, bacon & mayo.

🔹Açaí Bowl – It’s base ingredients are Açaí, bananas, blueberries, and unsweetened apple juice. All that sweet and tangy goodness is topped with locally sourced granola, almond butter, strawberries, and blueberries.

Its tangy purplish base and vibrant fresh fruit toppings has made this one of their most requested items.

🔹Elvis Bowl – This bowl really is fit for a king! It has a base of banana, peanut butter, and unsweetened almond milk. It’s then topped with locally sourced granola, chocolate chips, local honey, and sliced banana for the win!

🔹Caprese Toast – if you’re hungry for something different, that’s less sweet, more savory, and deliciously beautiful, then you need to check out this work of art! This is P•o•P•s•y’s version of an Italian Caprese salad. It’s locally produced sourdough bread toasted and loaded with avocado spread, tomato, mozzarella, basil, Italian seasoning, and Balsamic vinegar.

With this one you’ve got extreme flavors and textures that just work perfectly! From the mellow flavors of the cheese and avocado, to the zing of the Balsamic vinegar. Oh, and that pop of flavor from the tiny tomatoes was like fireworks!

🔹Taro Bubble tea – this one is simple enough. It’s creamy taro blended with ice. Taro is actually from a root. It has a sweet, nutty, and creamy flavor with subtle vanilla undertones.

🔹Pinkalicious Smoothie – this is bright pink, thick, and on the sweeter side with pitaya, banana, mango, and coconut milk.

The P•o•P•s•y brand has definitely grown since starting out as the cute little popsicle stand on the corner, giving folks of all ages a rush of excitement and nostalgia when seeing the bright little cart parked near by.
